This is a Burmese Beef Curry taught to me by my Dad. Using Huy Fong® chili garlic sauce and Flying Lion® fish sauce are highly recommended as per my mother, who insists—the two products are best and no substitutes!
Ingredients for Marination Overnight
• 924g beef, cubed 1" x 2" x 1"
• 2 tbsp. ginger-garlic paste (5—6 [30g] cloves garlic and 2" [20g] ginger)
• ½ tsp. turmeric powder
• 2 tsp. Kashmiri red chili powder
• 1¼ tsp. salt
• ¼ tsp. MSG
• ½—¾ c. whole plain yogurt
• juice from 1 lime/lemon
Ingredients for Curry
• ¾—1 c. vegetable oil
• 1 c. Huy Fong® chili garlic sauce
• 450g yellow onions, diced
• 3 tbsp. paprika powder
• 2 tbsp. Flying Lion® fish sauce
• 450g tomatoes, diced
• ¾ tsp. garam masala
• 2 tsp. jaggery
Ingredients for Garnishment
• 1 tbsp. dried spring onions
Ingredients for Achin (Burmese Pickled Shallots)
• 80g (~3) shallots, thinly sliced
• 3 small red chilies (1½—1¾ tsp.), sliced
• ½ tsp. salt
• ½ tsp. sugar
• 2⅔—3 tbsp. freshly squeezed lime/lemon juice
1. Marination Overnight: gather all the ingredients listed and mix well in a large mixing bowl. Cover and store in the fridge overnight.
2. Heat oil in a handi or pan. When hot and almost reaching smoking point, sauté the diced onions until golden brown for about 10-15 minutes. Lower the heat to medium and allow to oil to reach medium heat.
3. When the oil and onions are at medium heat, add chili-garlic sauce. Careful while stirring. The fumes from chili will be unpleasant. After stirring for about 3-4 minutes and slightly cooking the chili-garlic sauce—the raw smell dissipates—add fish sauce.
4. Add paprika powder. Continue cooking and stirring occasionally, until the oil start to separate.
5. Increase heat to high. Add the marinated beef cubes. Seer the surfaces of the beef cubes by roasting on high heat for about 3—5 minutes and rotating evenly.
6. Add diced tomatoes. Stir. Cover and cook on dum for 35—45 minutes.
7. Add garam masala and garnish with dried spring onions, prior to serving.
8. To make Achin: gather the ingredients for achin into a mixing bowl. Mix well and transfer to a serving bowl/plate.
