Ingredients (सामग्री)
• 10 elaichi (इलायची)
• ¼ tsp. haldi (हल्दी)
• 10 aalu bukhara (आलूबुखारा) [optional]
• (4) 1" (~¾ tsp.) dalchini (दालचीनी) sticks
• 10 laung (लौंग)
• ½ tsp. shahi jeera (शाही जीरा)
• 10 kali mirch (काली मिर्च)
• 2 tbsp. dhaniya powder (धनिया पाउडर)
• 1 tbsp. jeera powder (जीरा पाउडर)
• 4 badi elaichi (बड़ी इलायची)
• 1 tsp. lal mirch powder (लाल मिर्च पाउडर)
• 2 tbsp. tale hue pyaaz (तले हुए प्याज़)
• 1 tsp. anardana (अनारदाना)
• 4 tej patte (तेज पत्ते)
• 1 tsp. kasoori methi (कसूरी मेथी)
• 1-4 (~6g) javitri ke tukade (जावित्री के टुकड़े)
Method
1. Take all ingredients cinnamon stick, cloves, mace, kasuri methi leaves, bay leaf, fried onion, black cardamom, green cardamom, peppercorn, pomegranate seeds, fried brown onions in a blender.
2. Later grind and transfer this to a plate.
3. Then to it even add turmeric powder, black cumin seeds, coriander powder, cumin powder, plums and chili powder, mix it for few seconds.
Notes
• This powder is used for any type of biryani.
• Store this powder in an airtight container away from moisture. Don't use a wet spoon while using the powder.
• Use about 3 tbsp. biryani masala per 1kg chicken.
