I'm proud to share that my koobideh is improving. For me, adding little bit of besan when mixing the meat dough taste better, e.g. I like the texture and feel of the meat when chewing. I used 80::20 ground beef from the supermarket. I'll be making my own meat blend of beef and lamb to mince myself at home using a meat mincer/grinder the next time I plan to make Persian kebabs.
