The leftover Medu Vadas are turned into Dahi Bhalla (Vada). It's simple. Beat the dahi with a whisk until uniform smooth texture. Sweeten to taste. Soak the vadas for about 10-15 minutes and gently squeeze some of the soaked water. Pour over the leftover vadas and garnish with some sprinkles of cumin powder, red chili powder, and chopped cilantro (coriander) leaves. Optionally, if you have chaat masala, sprinkle a pinch over the Dahi Bhalla.
